fix(ci): use correct GHCR namespace dorfpflege-roessing
The org was renamed dorfpflege-rossing -> dorfpflege-roessing. A NEW GHCR package can only be created under the current org login, so pushing to ghcr.io/dorfpflege-rossing/dorfarchiv failed with "owner not found". Point IMAGE, deployment image ref and kustomize images entry at ghcr.io/dorfpflege-roessing/dorfarchiv. Co-Authored-By: Claude Opus 4.8 (1M context) <noreply@anthropic.com>
